Mother’s Day Breakfast Casserole

Ingredients

  • 12 pounds sausage
  • 12 eggs
  • 1 cup sour cream
  • 1/4 cup milk
  • 4 green onions
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 2 cups shredded cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Preheat the oven to 350 F. Spray a 9x13 pan with cooking spray

Combine eggs, sour cream, milk, cheese, salt, and pepper in a large bowl and mix until just combinedl

Heat a large skillet on medium heat and cook sausage until brown, breaking it into small pieces. Drain grease and add to egg mix

Add chopped peppers and onion to the skillet and saute. Add to bowl. Pour mix into pan and bake for 35-50 minutes or until edges are set.
